Manages the day to day operations of Cache Creek Casino Resort’s fine dining steak and seafood restaurant. Insure a high quality of dining experience for all Guests through continuous training of Service Staff and open communication with all support Departments.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
Promote Cache Creek Casino Resort in a positive manner.
Manage all Administrative duties to include: scheduling of staffing, performance reviews, attendance, coach and counseling.
Train staff on all sequence of service standards according to mandatory training program and holds staff accountable to them.
Master the Micros point of Sale System.
Master Eatec Requisitioning System.
Responsible for monitoring service levels on the dining room floor and adjusting staffing as needed.
Completes paperwork, daily reports, menu analysis, cost analysis, monthly P&L statements and all other necessary financial analysis for the restaurant.
Responsible for daily pre-shift meetings, as well as conducting regular staff training meetings.
Responsible for F&B wide wine training.
Maintains all F&B Wine Lists.
Must be able to perform all subordinate functions.
Ensures operational daily tasks are performed & completed.
Ensure all areas of the restaurant are constantly maintained for cleanliness.
Communicate vial e-mail to all appropriate parties in a professional manner.
Ensures necessary tools are available to the staff as needed.
Draft table diagram setup for restaurant.
Manage daily operations of restaurant.
Maintain open communication with all support departments.
Maintain accurate inventories of all equipment.
Maintain check book for Operating Expenses.
Perform table visitations with guests.
Attend scheduled meetings.
Other duties may be assigned.
Supervise a total of 10-14 employees in the assigned restaurant. Is responsible for the overall Repair/Maintenance needs, cleanliness, direction, coordination, and evaluation of the C ² Steak and Seafood Restaurant. Carries out supervisory responsibilities in accordance with the organization's policies and procedures. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Conducts monthly beverage inventory, settles variance reports, and updates Theoreticals daily.

Experience and/or Education
Associate's degree (A. A.) or equivalent from two-year College or technical school. Three to Five years of fine dining experience in a high volume al la carte steak/seafood restaurant as Manager or Maitre D'. Strong wine knowledge is a must.
Must be at least 21 years of age.
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
