Practice, support, and promote Thunder Valley Casino Resort’s "Winning Attitude" company-wide culture and demonstrate AAA Four Diamond service standards at all times.

Direct and work with all culinary Team Members to successfully execute all culinary operations with an emphasis on restaurant operations.

Maximize financial performance in all culinary areas, meeting or exceeding individual departmental food cost targets and overall divisional food cost.

Assist with hiring, training, policies and procedures, evaluating, and scheduling processes with an emphasis on restaurants.

Evaluate and document performance of restaurant Room Chefs.

Oversee progressive discipline administered to culinary Team Members to ensure compliance with collective bargaining agreement.

Assist the Room Chefs with Team Member issues, coordinating with Human Resources.

Perform administrative functions including, but not limited to, policies and procedures, communication with vendors and internal departments, filing, data entry, payroll, scheduling, and shift bids.

Evaluate equipment, stock levels, labor, and business volume forecasting, taking appropriate actions to ensure all areas are prepared and in working order.

Communicate with outgoing and incoming Chefs.

Develop plating guidelines, food specs, and training sessions for culinary Team Members to adhere to and deliver AAA Four Diamond service standards.

Train and develop culinary management team.

Responsible for periodic performance evaluations of subordinate management levels, providing appropriate praise, coaching, and guidance.

Support Room Chefs in the documentation of attendance, discipline, incidents, and schedules, meeting notes, reports and any other related material using the appropriate forms provided.

Direct methods of food preparation, portion size, creativity, and garnishing in line with a high end culinary operation including specialty restaurants and Four Diamond food ratings.

Maintain knowledge of products offered including recipes, prices, presentation, and ordering.

Ensure proper storage of all kitchen goods in the store rooms, refrigerators, and walk-in freezers adhering to all health code principals.

Maintain knowledge of internal control procedures and all company, as well as department, policies.

Attend and complete company provided leadership and training classes.

Ensure all operations follow safety and health guidelines in accordance with governmental public health and sanitation regulations.

Remain informed of new developments affecting the operation of the casino and resort.

Recognize and report all broken or malfunctioning equipment, and correct such problems in a timely manner.
