This position is responsible for the overall cleaning, sanitation, packaging, and quality control of the Meat Processing Plant and general safety of all incarcerated individual workers and accompanying staff members. Employees will have regular and substantial contact with persons incarcerated in California Department of Corrections and Rehabilitation institution and/or medical facilities.

• Experience organizing and coordinating physical inventory and internal audits.
• Experience in the proper use and sanitation of food & processing equipment.
• Manufacturing experience of raw material to finished goods.
• Previous CALCTRA/CDCR employment.
• Prior meat processing experience.
• Experience writing, tracking, filing and reporting department and unit information.
• Supervisory and managerial experience.
• Computer knowledge and experience: Microsoft Office skills (Excel, Word, PowerPoint, Outlook, Teams), label printing, etc.
• Professional certifications: ServSafe Food Handler, USDA, etc.
• Ability to work in a correctional institution.
• Ability to exercise initiative, good leadership, organizational skills, and good attendance.
• Ability to supervise and instruct incarcerated individuals in food processing, sanitation, and safety practices.
• Ability to maintain sufficient strength, agility and endurance to perform during stressful (physical, mental, and emotional) situations encountered on the job without compromising their health and well-being to their fellow employees or that of incarcerated individuals.
